One of South Africa’s leading 5* hotels, situated along the Cape Garden Route, seeks a qualified candidate for the position of: BANQUETING CHEF DE CUISINE KEY PERFORMANCE AREAS: Food delivery – maintain highest quality of food delivery; COLD PRODUCTION includes prepare all the components of cold appetizers, ranging from salads to cheese plates, terrines, antipasto course and present them wonderfully, creativity & come up with innovative cold foods from leftovers, for buffet menus and banqueting events Food delivery – maintain highest quality of food delivery; HOT PRODUCTION includes banquet-style for preparation, top quality hot meals using latest trends and/or classic techniques Food costs – monitoring expenses, portion sizes Management of staff – performance management, discipline, staff compliment needed Stock control – par stock maintained, food and equipment counts Cross functional integration – interdepartmental communication to anticipate & ensure guest satisfaction MINIMUM REQUIREMENTS: 3 year Chefs Diploma 3-5 years experience as a Sous Chef Knowledge of food ordering and costing HACCP knowledge All applications must have 4-6 photos of current dishes attached to the CV COMPETENCIES REQUIRED: Ability to manage multiple/large volume food delivery points Achieving and maintaining top quality menus and food delivery All applications submitted must contain written proof of employment, supporting documents re training and tertiary education completed and a recent photograph, please.
