Position Reports to: General Manager What are the key responsibilities of this position? · The Head Chef position is based in the lodge kitchen and is responsible for the overall management of the kitchen and the kitchen brigade in this lodge which hosts discerning international clientele. · Must have excellent management skills with a training orientation · It is the responsibility of the head chef to monitor standards within the department. The role is additionally strategic in nature, and the head chef must drive the appropriate food directive for the lodges, and move the department towards achieving broader goals. · In this capacity, guest expectations regarding the standard of food should be exceeded. In addition, the kitchens need to be monitored so that they run in a cost effective manner, within the agreed budget; in a manner which is conducive to positive inter-personal relationships between staff; and at a superior level of efficiency. · The hygiene and safety of the kitchen is to be maintained at the highest level. All kitchen equipment must be cared for, with breakages kept to an absolute minimum. · The head chef must continually grow the kitchen staff and him/her in terms of kitchen knowledge and skills and discuss any training requirements with the lodge HR manger or general manager. · Finally, the head chef must hand over responsibilities to the Sous chef in his/her absence and ensure that a full handover is received on his/her return. Which qualifications/skills will secure this position? · Exposure to fine dining and the latest trends in creative, fine dining cooking and a passion for food · Applicants should have either 5 * Hotel, 5 * Lodge experience or top restaurant experience · Relais & Chateaux experience will be looked upon favorably · Hard working, passionate, dedicated and committed · Have experience in running multiple small to medium sized kitchens and a professional · chef’s qualification · Be able to calculate food costs and understand kitchen finances · Good computer literacy · A clear understanding of basic labour law and disciplinary procedures · Assertiveness, patience and good organizational skills · Understanding of kitchen procedure and timing requirements and be able to plan · accordingly · Good communication skills · The ability to implement and maintain health and hygiene procedures · Knowledge of safety procedures and the use of firefighting equipment · First-Aid training Please ensure that you provide the following information with your application: - Photograph – Head and shoulders picture, in low resolution format for our database - Start and End dates for all previous employment - Written references that you have available - Current contact telephone numbers and email addresses for all previous employers, for referencing purposes.
